How are fruit bubbles or even molecular dishes made? Now you can show your skills and become a molecular cuisine expert. Science Promotion Unit and Nano and Advanced Materials Institute (NAMI) will jointly organise “Popping Fruit Bubbles” workshop during HK SciFest. Participants will learn the technique of chemical encapsulation and prepare various types of fruit juice bubbles. Chemical encapsulation is the process in which tiny droplets are surrounded by a coating that forms when two solutions are mixed. This technology has many applications in our everyday life including molecular gastronomy and the next generation of drug and food supplements. Don’t miss the chance if you want to try making fruit juice bubbles!
